Didn’t they come up with the whole roast pig stuffed with sausages hack? (When it was about to be served, someone would note that the pig had not been gutted properly. Nervously, it would be cut open, and out would stream properly cooked sausages.) Roman banquets were full of novelties and entertainments. Of course, that was part of a much older tradition, it’s just that some Roman sources have survived.

I think modern food hacking is wonderful, but when I actually want to eat I’m usually with the late Andre Soltner who ran Lutece and claimed that he had never invented a new dish. Not everyone likes to listen to Stravinsky. In food and in music, the tonal scale hasn’t been played out yet.

P.S. The science of cooking is still fascinating. Now I know why I’ll never buy a pressure cooker. Who wants flavorless onions?

The more adventurous options are on the east end of Cambridge St., where Portuguese seafood dominates.
